Ingredients for 4 people:
For pasta:
- 200 gr white flour type 00
- 2 eggs
- salt
For the stuffing:
- 100 grams of smoked salmon
- 200 grams of goat Caprino “AMALTEA“.
To season:
- 2 packs of cream
- smoked salmon in small pieces
- green pepper
Preparation:
Mix the flour with the eggs and add a pinch of salt. We get a thin sheet. We take the mold for the ravioli and lay the dough to size.
Mix the salmon with goat’s goat cheese (all cold). Distribute the filling and cover with another sheet by pressing the sides slightly to prevent the filling spill. Remove the ravioli from the mold and place them on a floured cloth.
Cook the ravioli in abundant salted water for 5 minutes and season with cream, small pieces of smoked salmon and a spoonful of Lompo eggs (to taste).
