Just in the province of Varese, 80% of the raw material is taken from medium-to-small farms, managed by young, motivated, specialized staff with adequate technical skills. Only in this way, Amaltea, with large investments in research and control, is able to have an excellent raw material, a focal point and distinctive for the company. The daily contact with the milk producers, the frequency of the withdrawn milk, the processing of the same through specific techniques and crafts, contribute to obtaining a cheese with unique organoleptic characteristics.
